Daring and delicious has always been the mantra at Scout PNW, Thompson Seattle’s farm-to-table restaurant. We’re grateful to our local community and to all of our guests who have dined with us and supported Scout PNW over the last three years, and we’re truly excited about introducing a new concept to our guests.
Starting January 14, 2019, Scout PNW will be closed for a complete redesign and rebrand, building a new, unprecedented all-day dining experience celebrating the interconnectivity between food and environment.
We will reopen to both our hotel guests and the public in Spring 2019.
Helmed by Thompson Seattle’s nationally recognized Executive Chef Derek Simcik and Executive Pastry Chef Kate Sigel, our new restaurant concept will introduce fully transformed menus reflecting a refined culinary approach that brings to life an experiential and sensory dining experience, while still retaining the same sense of innovation and gastronomically-driven fare offered at Scout PNW.
Designed by award winning, Chicago-based design firm Rebel House with branding by All Good, a New York-based design agency, our re-concepting will include a complete interior remodel and redesign, new menus, and provocative new restaurant name… yet to be revealed.
